I have to give my hubby complete credit for the desire and implementation of making our first batch of homemade granola bars! I enjoy baking/cooking for the end product, not necessarily for the fun of the process. The quicker and easier a way to get a delicious end product, the better. My hubby is different; he enjoys the creative process behind cooking and likes to experiment. Thus, he was quite thrilled about the idea of making homemade granola bars, where we would throw in all sorts of different ingredients until we found just the right mix and flavor. All I saw was a big mess in the kitchen for little profit. However, I begrudgingly let him loose... I must say, the granola bars were
very yummy and we have made them several times since! Also, from his initial experimentations, I have adapted the granola bar recipe into a
good and easy oatmeal, chocolate chip cookie recipe (with no dairy, egg, or nuts). What a great pair we make!
Oatmeal Chocolate Chip Cookies
2 cup oats
1/2 cup brown sugar
1/2 tsp. cinnamon
1/2 cup melted butter or margarine
1/2 cup dairy-free chocolate chips
1. Preheat oven to 350 degrees. 2. Combine ingredients. 3. Roll into small balls and place on a greased cookie sheet. 4. Bake 20 minutes.
After
sharing about my hesitation of buying granola bars at the store that often contain the warning on the package, "
may contain peanut and other nut ingredients," I'm now a big fan of homemade bars! Plus, they are
a lot cheaper. This how-to video is what initially inspired my hubby to make granola bars and it provides several yummy recipes:
