Today's Lofty Goal!


I was invited to go to a friend's farm yesterday and pick some veggies from the field now that her and her husband's selling season is over. It was a huge blessing and I now have an abundance of bell peppers, chili peppers, zucchini, cucumbers, and pumpkin sitting in the kitchen! So today's lofty goal is to prepare and freeze as much of the produce as I can before it goes bad. Here's my plan:

  1. Cut up the peppers and freezing them in meal portioned bags. When I need them in a meal throughout the Fall/Winter, I can just pull out a bag. 
  2. Bake the pumpkins (they're pie pumpkins) and then scoop out the insides to freeze for future pumpkin breads/muffins. 
  3. Bake a whole bunch of zucchini breads and then freeze them for later (my loftiest goal) I decided to just grate the zucchini and freeze it in bags for now, so I can pull out a bag when I'm ready to bake a loaf.

Plus, I have the well-meaning assistance of my one year old, which always requires a little extra patience on my part. I'll post an update later.
