- Cut up the peppers and freezing them in meal portioned bags. When I need them in a meal throughout the Fall/Winter, I can just pull out a bag.
- Bake the pumpkins (they're pie pumpkins) and then scoop out the insides to freeze for future pumpkin breads/muffins.
Bake a whole bunch of zucchini breads and then freeze them for later (my loftiest goal)I decided to just grate the zucchini and freeze it in bags for now, so I can pull out a bag when I'm ready to bake a loaf.
Plus, I have the well-meaning assistance of my one year old, which always requires a little extra patience on my part. I'll post an update later.
