My Ultimate Comfort Food: Rice Pudding.

Yum. I'm not sure why, but rice pudding has to be my ultimate comfort food. Maybe because it reminds me of my grandma and eating at her home on Sunday evenings growing up. Or maybe because it is just so warm, creamy, and sweet. Anyways, here's what I'm eating for a night time snack tonight!

Rice Pudding
2.5 cups of milk
1/2 cup water
3/4 cup rice
1/4 cup sugar
1/4 tsp. salt
1 tbsp. vanilla

Mix 2 cups of milk, water, and rice over high heat. Bring to boil.
Turn down heat to low/medium and cover. Simmer until most water is absorbed, about 15-20 minutes.
Stir in sugar, salt, vanilla, and remaining 1/2 cup milk. Cook until desired consistency, about 5-10 minutes stirring.
Sprinkle on top with cinnamon.

Makes six servings (or two in my case).
