Rice Pudding
2.5 cups of milk
1/2 cup water
3/4 cup rice
1/4 cup sugar
1/4 tsp. salt
1 tbsp. vanilla
Mix 2 cups of milk, water, and rice over high heat. Bring to boil.
Turn down heat to low/medium and cover. Simmer until most water is absorbed, about 15-20 minutes.
Stir in sugar, salt, vanilla, and remaining 1/2 cup milk. Cook until desired consistency, about 5-10 minutes stirring.
Sprinkle on top with cinnamon.
Makes six servings (or two in my case).
