I conquered my fear: gluten-free baking!

Well, I finally conquered my fear, bought some rice flour and ridiculously expensive xanthum gum at Sprouts this week, and baked gluten-free from scratch! I have been intimidated by this for some while, and finally, after some encouragement from another gluten-free mama (including her actually giving me a gluten-free cook book and pinning her favorite recipes), I took the plunge... and it all ended up just fine. My daughter said, "Mom, I think you should make this every day," so that was a big boost in confidence. Here's my first ever gluten-free banana bread and gluten-free pancakes (they're also egg-free and dairy free)!

It turned out!
A pretty happy kid to get pancakes AND banana bread for dinner (especially since I haven't baked much at all in the past month or two).
