Super yummy rice flour apple crisp


I needed a simple rice flour apple crisp recipe that would fit the bill for my husband's many allergies. He can't have oats or many of the gluten-free flours, but rice flour is safe.

I found this gluten-free apple crisp recipe over at Gluten Free Recipe Box and thought I'd give it a try. I substituted coconut butter for regular butter and I left the peels on the apples (just cored and sliced), since I'm all about easy these days. I found that you can't even tell the difference with the finished product. The apples were given to us from a friend, so they were also free!

I had my doubts as I was making it, since the only grain is rice flour... but, let me tell you, this is pure deliciousness! It's also gluten, egg, nut, dairy (with butter substitute), and soy free.
