Dairy, Egg, & Nut Free Banana Oat Cookies
3/4 cup dairy free margarine
1 cup sugar
1 1/4 cup mashed overripe bananas
1 1/4 tsp. vanilla
1 3/4 cup flour
1 tsp. salt
1/2 tsp. baking soda
3/4 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 cup quick cooking oats
1/2 cup dairy free chocolate chips
1. Preheat oven to 400 degrees. Line two baking sheets with parchment paper or use a baking stone.
2. In the bowl of a mixer fitted with the paddle attachment, combine the margarine, sugar, mashed bananas, and vanilla until smooth.
3. In a separate bowl, combine flour, salt, baking soda, cinnamon, and nutmeg with a wire whisk. Add to margarine mixture and combine thoroughly. Stir in oats and chocolate chips.
4. Divide dough evenly on prepared cookie sheets. Bake 12-15 minutes, or until light brown. Cool completely.
