Easy, no-peel, sugar-free homemade applesauce


We were given a big box of apples from some friends who are having what seems to be a bumper crop this year! Being 8 months pregnant, I wanted an easier, faster way to make apple sauce besides peeling all the apples (I'm too achy for that jazz). I came across this very simple method from The Finer Things in Life (click for full recipe/instructions) and decided it was worth a try!



I simply cut off any brown spots, used my corer to core/slice the apples, and threw the slices into the pot with the peels still on. I added about 2 cups of water (probably will reduce next time as it turned out a little more soupy than saucy as a texture) and some cinnamon. I didn't use any sugar and it was plenty sweet, even for me! After about 30-40 minutes of simmering, the peels became soft and then I blended the apples in a blender.

Since I've never canned and that is intimidating to me, I froze two quart bags full of the apple sauce and left some in a jar in the fridge for us to eat this week. I have another batch to do still, but this is much more of a doable task now that the apples don't need peeled. And, you can't even taste the difference!
