Our Gluten-free, Soy-free, Dairy-free, Egg-free, Peanut-free, Tomato-free, Bean-free Menu Plan on a Budget.

Well, after our gluten-free dieting experience, my dear hubby found out that he does react to gluten afterall. Jesse noticed much more congestion when he went back on gluten and he generally felt worse. Interestingly, while eating gluten-free, Jesse's other allergies to soy and tomato seemed to be worse. He also reacts to beans and certain other foods such as many raw vegetables, melons, tapioca, and some spices. In an effort to feel well, he is really trying to eliminate the foods from his diet that he knows affect him negatively.

I commend Jesse and his character for living his entire life with food allergies, where he often cannot eat what others around him are enjoying. Can you imagine that for one minute? Quite a thorn in the flesh. But, I know he will enjoy the feast in Heaven more than most of us who could eat so much on Earth.

So, for $68, here's our Gluten-free, Soy-free, Dairy-free, Egg-free, Peanut-free, Tomato-free, Bean-free Menu Plan for the week (and I try to do organic, too, as much as possible):

Breakfast:
Fried Brown Rice with Cinnamon & Raisins for Jesse (it's actually pretty good)
5-grain cereal for the kids and I
Bananas
Juice

Lunch:
Salad with raisins/craisins, cucumber, turkey bacon bits, and black olives for Jesse and I
Apples with almond butter
Sunflower Seed Butter and Jelly Sandwiches (we are a peanut-free household) on homemade bread for the kids
Carrot sticks
Pears

Dinner:
Roasted Chicken with rice and veggies
Chicken soup with homemade broth, carrots, celery, and rice
Stir fry chicken with broccoli, onion, peppers, garlic, carrots, and rice
Sausage and rice with veggies
Nachos with hamburger, chile peppers, olives (cheese and salsa for me and the kids)

Snack:
Popcorn with coconut butter and salt
Cheerios with coconut milk (who knew that Honey Nut Cheerios were gluten-free?)!

As you can see, we are eating a lot more rice now, as that is a safe food for all of us and a cheap base to many meals.

Bon appetite!
